Raising chickens ????

i need to get some general info. on chicken breeds. i would like to get some egg laying hens, and need to know if i get 10 hens how many roosters do i need ?? can i mix and match breeds ?? so far i like the Jersey Giant , Plymouth Rock , Rhode Island Red , Easter Egger , and Phoenix Chickens. are the Phoenix even able to take some cold weather ?? i live in Indiana. if anyone has any tips for a first time ..chicken buyer.. that is a little lost on the subject, i would love to receive some info. from you. thank-you .
